You know what makes me happier than a pig in fresh mud? Tacos. I don’t know anyone who doesn’t love tacos (and if you don’t then why are you reading this). They make everything better. You can make them quickly which makes it perfect for a mid-week fiesta! Keep on reading for some delicious Chicken Tacos.

What Do You Need:

  • 1 Pound Boneless Skinless Chicken Tenders
  • 2 Tablespoons of Clean Taco Seasoning
    • (or 1 Packet Taco Seasoning from Food Lion)
  • 3/4 Cup Chicken Broth
  • EVOO
  • Optional For Serving
    • Sour Cream
    • Salsa
    • Cheese
    • Tortillas

Heat one tablespoon of EVOO on medium high  in a deep saute pan. While this is warming away in your pan, chop chicken tenders into small bites. When you’re done chopping them up, throw the chicken bites in your hot pan- with some force if it’s been a rough day.


Salt and pepper these bad boys right away, (easy on the salt if you are using packaged seasoning).

When the chicken is almost cooked all the way through throw in your taco seasoning. Stir them around and allow them to get acquainted. Add in Chicken Broth, this acts like the water  recommended on the taco seasoning directions. By using Chicken Broth you add in a whole new dimension of “chickeny” flavor, that will leave your family going mm-mm-good.


Turn heat down to medium low and simmer until your sauce has thickened around the chicken -about 11 minutes on medium low.

I topped these babies with Black Beans, Shredded Cheese, Salsa, Sour Cream and of course cheese. I also had some fresh Green Onions so I sliced them on for color, and a little kick
