Sometimes mornings are hard, so why not make them easier with Breakfast Burrrritos? This recipe is perfect for little hands to help with!
What Do You Need:
- 1 Dozen Eggs
- 7 Burrito Sized Tortillas
- Shredded Cheese
- Breakfast Meats (I used Ham and Bacon)
- Gallon Sized Freezer Bags
- Aluminum Foil
To begin scramble your eggs. I like to scramble my eggs over medium heat, taking them off the heat ever few minutes and completely removing them from the heat when they are almost cooked to my liking. I do this so the eggs are still light, and FLUFFY!
While you are working on those eggs, you should cook your bacon. I do this on a sheet pan in a 375 degree oven. Lay the bacon out flat on a sheet pan covered in foil and bake until it reaches your desired crispiness. No muss, no fuss, you feel me?
Allow your sous chef to chop up Ham, with a knife that has no value other than spreading butter… Safety first people.
Assemble the key players.
Eggs meet Ham. Ham say Hello to the Cheese Sisters. Good, now we all know each other:
Set up your rolling station. Placing cheese, 2 table sized (you know like a cereal spoon), tablespoons into the center of each tortilla, breakfast meat. Folding in the sides, the end closest to you and then rolling away. (This makes 7 burritos)
When you’ve got all your little babies rolled up tight, throw them in a saute pan with a little olive oil just long enough to melt the cheese a little. This helps the burritos stay together!
Repeat until all burritos are browned. Allow these little guys to cool before wrapping them in tin foil and placing them in freezer bags.
To Heat: Unwrap burrito from tin foil, wrap in a damp paper towel, heat for 1 minute and 30 seconds, or until the inside is warm and delicious.
You can add in any veggies you like, just be aware of the water content in things like salsa- this bad boy prefers to be dipped!
